Spinach and Strawberry Salad

Another day, another salad. This one is so summery and really good for you! The vitamin c from the strawberries helps your body absorb the iron in the spinach, so they help each other in flavor and nutrition 🙂

We have had really delicious organic strawberries around lately so I put them to use in this salad. My husband liked it so much that he went to the store on his own and picked up more salad ingredients, then asked if I would make it again this week lol. It was so cute!

 

Spinach and Strawberry Salad

2 cups spinach

2 cups spring greens

1 1/2 cups sliced strawberries

feta cheese (maybe 1/4 or 1/3 cup? I didn’t measure)

balsamic reduction with a splash of olive oil

fresh cracked pepper, to taste

Directions:

Mic spinach and spring greens together. Slice strawberries and add to mixture.

Combine balsamic reduction with a splash of olive oil and whisk together.

Toss with desired amount of feta cheese. Add balsamic reduction vinaigrette and toss to coat.

Serve with freshly cracked pepper.

Hopefully that recipe makes sense! It is really good with goat cheese as well, though my husband and I both prefer feta. The addition of walnuts or pecans would be nice as well. This would pair wonderfully with a nice steak, I think 🙂
